2 large Russet potatoes

Instructions
Wash and thinly slice the potatoes. Aim for slices about 1/16 inch thick. You can use a mandoline for consistent thickness.
Place the sliced potatoes in a bowl of cold water for 15 minutes to remove excess starch. Drain the water and pat the potato slices completely dry with paper towels. This step helps achieve crispiness.
In a clean bowl, toss the dry potato slices with the olive oil, kosher salt, and garlic powder until evenly coated.
Preheat your air fryer to 350°F (175°C).
Place the seasoned potato slices in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
Air fry for 12 to 18 minutes, shaking the basket every 5 minutes, until the chips are golden brown and crisp. Cooking time varies based on the air fryer model and chip thickness.
Remove the chips and let them cool slightly on a wire rack. They will crisp up more as they cool.

Notes
For salt and vinegar flavor, toss the cooked chips with 1 teaspoon of white vinegar mixed with 1/2 teaspoon of salt immediately after removing them from the air fryer.
If you do not have an air fryer, you can bake these chips on a baking sheet at 400°F (200°C) for 15-20 minutes, flipping halfway through.
