For the Streusel Topping:

1/2 cup packed brown sugar

Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
Prepare the streusel: In a small bowl, combine the streusel flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Set this aside.
Prepare the cake batter: In a medium bowl, whisk together the 2 cups of flour, baking soda, and 1 teaspoon of cinnamon. Set aside.
In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time, mixing well after each addition. Mix in the sour cream and vanilla extract until just combined.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the batter is just smooth. Do not overmix.
Gently fold the diced apples into the batter.
Pour half of the batter into the prepared baking pan. Sprinkle half of the reserved streusel topping evenly over the batter.
Spoon the remaining batter over the streusel layer. Sprinkle the remaining streusel topping over the top.
Bake for 45 to 55 minutes, or until a wooden pick inserted into the center comes out clean.
Let the cake cool in the pan on a wire rack for at least 20 minutes before slicing and serving warm.

Use firm, slightly tart apples like Granny Smith for the best texture and flavor contrast.
