  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup finely diced peeled apples (about 1 medium apple)
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons caramel sauce, for drizzling (optional)

Instructions

  1. In a large bowl, cream together the softened butter and 1 cup granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In a small bowl, combine the diced apples, 1/4 cup granulated sugar, cinnamon, and nutmeg. Stir to coat the apples.
  6. Gently fold the apple mixture into the cookie dough.
  7. Drop rounded tablespoons of dough onto baking sheets lined with parchment paper, about 2 inches apart.
  8. Bake in a preheated oven at 375°F (190°C) for 10-12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  10. If desired, drizzle with caramel sauce before serving.

Notes

  • For chewier cookies, slightly underbake them.
  • Store cooled cookies in an airtight container at room temperature for up to 3 days.
