Ingredients
Scale
1 cup rolled oats
2 cups water or milk (dairy or non-dairy)
2 very ripe medium bananas, mashed
1 teaspoon ground cinnamon
Pinch of salt
Optional: 1 tablespoon peanut butter for topping
Optional: Sliced banana for topping
Instructions
Combine the rolled oats, water or milk, mashed bananas, cinnamon, and salt in a medium saucepan.
Place the saucepan over medium heat.
Bring the mixture to a gentle simmer, stirring frequently to prevent sticking.
Reduce the heat to medium-low and continue cooking for 5 to 7 minutes, stirring often, until the oatmeal thickens and reaches your desired creamy consistency. The mashed banana will dissolve and sweeten the oats.
Remove from heat. Let it sit for 1 minute to set slightly.
Divide the oatmeal into bowls. Top with sliced banana and peanut butter, if using.
Notes
Use very ripe bananas; the browner the peel, the sweeter the oatmeal will be.
For extra creaminess, use milk instead of water, or stir in 1 tablespoon of Greek yogurt or cream cheese after removing from heat.
This recipe is naturally sweetened; avoid adding extra sugar.
For a peanut butter banana oatmeal variation, stir 1 tablespoon of peanut butter into the oats while cooking.
