Instructions

  1. Preheat your oven to 375 degrees F. Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Prepare the crust: In a large bowl, whisk together 1 1/2 cups flour, 1/2 cup granulated sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press two-thirds of the crumb mixture firmly and evenly into the bottom of the prepared pan to form the bottom crust.
  4. Prepare the filling: In a separate bowl, toss the sliced apples with brown sugar, lemon juice, 1 teaspoon cinnamon, 1/4 cup flour, and nutmeg until the apples are evenly coated.
  5. Spread the apple filling evenly over the bottom crust in the pan.
  6. Prepare the streusel topping: In a small bowl, combine the remaining 1/4 cup flour, 1/4 cup sugar, and oats (if using). Cut in the 1/4 cup cold butter until crumbly.
  7. Sprinkle the streusel topping evenly over the apple filling.
  8. Bake for 45 to 55 minutes, or until the topping is golden brown and the apple filling is bubbly.
  9. Let the apple pie bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  10. Cut into squares and serve.
