1 pound rotini or farfalle pasta
1 pound bacon, cooked crisp and crumbled
1 head romaine lettuce, chopped
2 cups cherry tomatoes, halved
1 cup shredded cheddar cheese (optional)
1/2 cup mayonnaise
1/4 cup sour cream or plain Greek yogurt
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and black pepper to taste
Instructions
Cook the pasta according to package directions until al dente. Drain the pasta and rinse immediately with cold water to stop the cooking process. Set aside.
While the pasta cooks, cook the bacon until crisp. Drain the bacon on paper towels and crumble it.
In a large bowl, whisk together the mayonnaise, sour cream or yogurt, white wine vinegar, Dijon mustard, garlic powder, and onion powder. Season the dressing with salt and pepper.
Add the cooled pasta, crumbled bacon, halved cherry tomatoes, and shredded cheddar cheese (if using) to the dressing. Toss gently to coat everything evenly.
Cover the bowl and chill the salad in the refrigerator for at least 30 minutes before serving. This allows the flavors to combine.
Just before serving, gently fold in the chopped romaine lettuce. Do not add the lettuce too early, or it will become soggy.
Taste and adjust seasoning if needed before serving.
Notes
For a make-ahead option, prepare the pasta, bacon, and dressing up to one day in advance. Store them separately. Combine everything except the lettuce a few hours before serving. Add the lettuce right before you serve the salad.
If you prefer a tangier dressing without mayonnaise, substitute the mayo and sour cream with 3/4 cup of your favorite ranch dressing or use a balsamic vinaigrette.
