A quick and flavorful week-night chicken dish topped with fresh tomato and basil, perfect for a simple summer meal.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 2 Roma tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 1 clove garlic, minced
  • 1 tbsp balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with olive oil, oregano, garlic powder, salt, and pepper.
  3. Place chicken on a baking sheet.
  4. Bake for 20-25 minutes, or until chicken is cooked through.
  5. While chicken bakes, combine diced tomatoes, basil, minced garlic, and balsamic glaze in a small bowl.
  6. Top the cooked chicken with the tomato mixture before serving.
