1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
2 tablespoons Cajun seasoning
1 tablespoon olive oil
1 small yellow onion, diced
2 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions
Toss the cut chicken pieces with 1 tablespoon of the Cajun seasoning, salt, and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
Reduce the heat to medium. Add the diced onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let the broth simmer for 2 minutes.
Stir in the heavy cream and the remaining 1 tablespoon of Cajun seasoning. Bring the mixture to a gentle simmer.
Reduce the heat to low. Stir in the Parmesan cheese until the sauce is smooth and slightly thickened.
Return the cooked chicken to the skillet. Stir to coat the chicken in the creamy sauce. Heat through for 1 to 2 minutes.
Serve immediately, garnished with fresh parsley if desired. This pairs well with rice or pasta.
Notes
For a spicier dish, increase the amount of Cajun seasoning or add a pinch of cayenne pepper to the sauce.
If you prefer chicken thighs, they work well and stay very moist in this skillet preparation.
To make this a Cajun Chicken Pasta, add 8 ounces of cooked pasta directly to the sauce before returning the chicken.
