1 cup light brown sugar, packed
1/2 cup (1 stick) unsalted butter
1 cup semi-sweet chocolate chips
1/2 cup milk chocolate chips (optional, for variation)
1/4 cup chopped peanuts (optional)

Instructions
Line a baking sheet with parchment paper. Arrange the Ritz crackers in a single layer on the prepared sheet.
In a small saucepan over medium heat, combine the brown sugar and butter. Stir constantly until the butter melts and the mixture comes to a full boil. Let it boil for exactly one minute without stirring after it begins to boil.
Immediately pour the hot caramel mixture evenly over the layer of Ritz crackers. Spread quickly to coat all the crackers.
Place the baking sheet in the oven and bake at 350 degrees Fahrenheit for 4 to 5 minutes, just until the caramel is bubbly. Watch closely to prevent burning.
Remove the sheet from the oven. Immediately sprinkle the chocolate chips evenly over the hot caramel layer. Let stand for 5 minutes to soften the chocolate.
Spread the melted chocolate evenly over the crackers. If using peanuts or sprinkles, add them now.
Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is completely firm.
Once set, break the sheet into individual caramel cracker bites. Store in an airtight container.
Notes
For a different flavor profile, substitute the semi-sweet chips with white chocolate chips for a festive look.
If you prefer a smoother chocolate topping, melt the chips gently in a double boiler or microwave, stirring until smooth, before drizzling or spreading.
