Make this satisfying Chicken Caesar Pasta Salad fast. It combines tender pasta, cooked chicken, crisp romaine, and a rich homemade Caesar dressing, perfect for a quick dinner or meal prep lunch.

Ingredients

Scale
  • 1 pound rotini pasta
  • 2 cups cooked, shredded chicken breast
  • 4 cups chopped romaine lettuce
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup homemade Caesar dressing (or store-bought)
  • 1/4 cup croutons (optional, for topping)
  • Salt and black pepper to taste

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain the pasta and rinse briefly with cold water to cool it down. Place the cooled pasta in a large mixing bowl.
  2. Add the shredded chicken, chopped romaine lettuce, and grated Parmesan cheese to the bowl with the pasta.
  3. Pour the Caesar dressing over the ingredients.
  4. Toss everything gently until the pasta, chicken, and lettuce are evenly coated with the dressing.
  5. Season with salt and pepper as needed.
  6. If using, top with croutons just before serving for maximum crunch.
  7. Chill for at least 15 minutes before serving for best flavor, or serve immediately.

Notes

  • For a quicker preparation, use pre-cooked, rotisserie chicken.
  • You can prepare the dressing and chop the lettuce a day ahead to save time on the day you assemble the salad.
  • This salad holds up well for make-ahead lunch ideas, but add croutons right before eating to keep them crisp.
