  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 5 ounces fresh spinach
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pound the chicken breasts to an even 1/2-inch thickness. Season both sides with salt, pepper, and garlic powder.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic burn.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  5. Stir in the heavy cream and bring the sauce to a gentle simmer. Cook until the sauce slightly thickens, about 3 minutes.
  6. Stir in the grated Parmesan cheese and red pepper flakes, if using. Continue stirring until the cheese melts smoothly into the sauce.
  7. Add the fresh spinach to the sauce. Stir gently until the spinach wilts down completely, which takes about 2 to 3 minutes.
  8. Return the cooked chicken breasts to the skillet. Spoon the creamy spinach sauce over the chicken.
  9. Heat through for 1 minute before serving immediately.
