  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup finely chopped fresh parsley (optional, for color)

Instructions

  1. Toast the pecans: Spread the pecans in a dry skillet over medium heat. Cook for 4 to 6 minutes, stirring often, until fragrant. Remove from heat and let cool completely. Chop finely.
  2. In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, chopped dried cranberries, 1/2 cup of the chopped pecans, garlic powder, onion powder, salt, and pepper.
  3. Mix all ingredients thoroughly until they are evenly combined and the mixture is uniform. You can use a hand mixer on low speed or a sturdy spoon.
  4. Shape the cheese mixture into a ball, approximately 3 inches in diameter.
  5. Place the remaining chopped pecans on a shallow plate. Roll the cheese ball in the pecans until it is completely coated on all sides. If using parsley, mix it with the pecans before rolling.
  6. Wrap the cheese ball tightly in plastic wrap. Chill in the refrigerator for at least 2 hours, or up to 3 days, to allow the flavors to meld and the ball to firm up.
  7. Before serving, place the chilled cheese ball on a serving platter. Surround it with crackers, sliced baguette, or fresh vegetables.
