Achieve perfectly golden, crispy-edged potatoes with a simple garlic and herb seasoning, all cooked in one skillet.

  • 2 lbs Yukon Gold potatoes, cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Wash and cut your potatoes into uniform 1-inch cubes.
  2. In a large cast-iron skillet, melt the butter and olive oil over medium-high heat.
  3. Add the potato cubes to the hot skillet in a single layer.
  4. Cook for 10-12 minutes, stirring occasionally, until the potatoes begin to turn golden brown on the bottom.
  5. Add the minced garlic, rosemary, thyme, salt, and pepper to the skillet.
  6. Continue to cook, stirring more frequently, for another 15-20 minutes, or until the potatoes are tender and crispy on all sides.
  7. Garnish with fresh parsley before serving.

Notes

  • For extra crispy potatoes, do not overcrowd the skillet. Cook in batches if necessary.
  • You can add a pinch of red pepper flakes for a little heat.
  • These potatoes pair well with steak, chicken, or brunch dishes.
