A quick and cheesy Tex-Mex casserole featuring seasoned ground beef, Rotel tomatoes, and a creamy sauce, topped with crushed Doritos for a crunchy finish. Perfect for busy weeknights or game day.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 bag (9 ounces) Doritos, crushed
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
  3. Stir in the undrained Rotel diced tomatoes and green chilies and the condensed cream of chicken soup.
  4. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
  5. Remove the skillet from the heat and stir in 1 cup of shredded cheddar cheese until melted.
  6. Spread the crushed Doritos evenly over the bottom of a 9×13 inch baking dish.
  7. Pour the meat mixture over the Doritos.
  8. Top with the remaining 1/2 cup shredded Monterey Jack cheese and 1/2 cup shredded cheddar cheese.
  9. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  10. Let stand for 5 minutes before serving.

Notes

  • For a chicken version, use 2 cups of cooked, shredded chicken instead of ground beef.
  • You can assemble this casserole ahead of time and refrigerate it. Add a few extra minutes to the baking time if baking from cold.
  • For an extra cheesy casserole, add more cheese on top.
  • Any flavor of Doritos can be used, but Nacho Cheese is a popular choice.
