A nostalgic 1980s Midwest potluck favorite featuring seasoned ground beef, a tangy dressing, and crunchy Nacho Cheese Doritos. This recipe includes tips for make-ahead layering to prevent sogginess.

Ingredients

Scale
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 head iceberg lettuce, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced black olives
  • 1/2 cup sour cream
  • 1/4 cup Catalina dressing
  • 1 bag Nacho Cheese Doritos, crushed

Instructions

  1. Cook ground beef in a skillet over medium-high heat until browned. Drain fat. Stir in taco seasoning and 1/4 cup water. Simmer for 5 minutes. Let cool.
  2. In a large bowl, layer the shredded lettuce, seasoned beef, cheddar cheese, cherry tomatoes, and black olives.
  3. In a small bowl, whisk together sour cream and Catalina dressing.
  4. Just before serving, pour the dressing mixture over the salad. Top with crushed Doritos.

Notes

  • For make-ahead convenience, keep the dressing and crushed Doritos separate until ready to serve to maintain crunch.
  • Substitute ground turkey for a lighter option.
  • Add a layer of refried beans for extra heartiness.
