2 tablespoons butter
1 medium yellow onion, chopped
2 stalks celery, chopped
4 cups chicken broth
2 pounds Russet potatoes, peeled and diced into 1/2-inch pieces
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 cup all-purpose flour
2 cups whole milk
1 cup heavy cream
1 cup shredded sharp cheddar cheese, plus more for topping
1/2 cup sour cream
6 slices bacon, cooked and crumbled
2 tablespoons fresh chives, chopped, for topping
Instructions
Melt the butter in a large pot or Dutch oven over medium heat. Add the chopped onion and celery. Cook until softened, about 5 to 7 minutes.
Pour in the chicken broth. Add the diced potatoes, salt, pepper, and garlic powder. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
In a small bowl, whisk together the flour and milk until smooth. Pour this mixture into the simmering soup, stirring constantly until the soup begins to thicken.
Reduce the heat to low. Stir in the heavy cream. Do not let the soup boil after adding the cream.
Remove the pot from the heat. Stir in the 1 cup of cheddar cheese until fully melted and smooth. Stir in the sour cream until combined.
Taste the soup and adjust salt and pepper if needed.
Ladle the soup into bowls. Top each serving with crumbled bacon, extra shredded cheddar cheese, and fresh chives.
Notes
For a thicker soup, mash about 1 cup of the potatoes against the side of the pot before adding the dairy.
If you prefer a smoother texture, use an immersion blender to partially blend the soup before adding the cheese and cream.
You can substitute vegetable broth for chicken broth to make this recipe vegetarian-friendly (omit bacon topping).
