  • 1 1/2 cups all-purpose flour

  • 3/4 cup buttermilk
  • 1 tablespoon coarse sugar, for sprinkling (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or an 8×8 inch baking dish.
  2. Prepare the berry filling: In a large bowl, gently toss the mixed berries with 1/2 cup sugar, cornstarch, lemon juice, and vanilla extract until the berries are coated. Pour the berry mixture into your prepared baking dish.
  3. Prepare the buttermilk biscuit topping: In a separate medium bowl, whisk together the flour, baking powder, 1/4 cup sugar, and salt.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  5. Pour in the buttermilk and stir just until the dough comes together. Do not overmix.
  6. Drop spoonfuls of the biscuit dough evenly over the berry filling. You do not need to cover the entire surface; leave some gaps for the filling to bubble up.
  7. Sprinkle the tops of the biscuits with coarse sugar, if using.
  8. Bake for 35 to 45 minutes, or until the topping is golden brown and the berry filling is thick and bubbly.
  9. Let the cobbler cool on a wire rack for at least 15 minutes before serving. Serve warm with vanilla ice cream.
