  • 1 pound smoked sausage (kielbasa or andouille), sliced into rounds
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 cup long-grain white rice, uncooked
  • 2 teaspoons Cajun seasoning (adjust to your taste)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup frozen peas (optional, for color)
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat.
  2. Add the sliced smoked sausage to the skillet and cook until browned on both sides, about 4 to 5 minutes. Remove the sausage with a slotted spoon and set it aside, leaving the drippings in the skillet.
  3. Add the chopped onion and bell peppers to the skillet. Sauté until softened, about 5 minutes.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Add the diced tomatoes (with their juice), chicken broth, uncooked rice, Cajun seasoning, oregano, salt, and pepper to the skillet. Stir well to combine.
  6. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet tightly, and simmer for 15 minutes without lifting the lid.
  7. After 15 minutes, remove the skillet from the heat. Gently stir in the reserved sausage and the frozen peas, if using.
  8. Cover the skillet again and let it stand off the heat for an additional 5 minutes to allow the rice to finish steaming and absorb the remaining liquid.
  9. Fluff the rice mixture with a fork. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving this simple one pan sausage meal.
