1 tablespoon olive oil
1 pound ground beef
1 large yellow onion, thinly sliced
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups beef broth
1 1/2 cups uncooked white rice
1/2 cup shredded Gruyere or Swiss cheese (optional)
1/4 cup crispy fried onions (optional)
Instructions
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Add the sliced onion to the skillet with the beef. Cook, stirring occasionally, until the onions are softened and beginning to caramelize, about 8-10 minutes.
Stir in the minced garlic, dried thyme, salt, and pepper. Cook for 1 minute more until fragrant.
Pour in the beef broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Stir in the uncooked rice. Bring the mixture back to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
If using cheese, sprinkle it over the top of the rice mixture. Cover and let stand for 5 minutes, or until the cheese is melted.
If desired, top with crispy fried onions before serving.
Notes
For deeper onion flavor, you can caramelize the onions separately before adding them to the skillet with the beef.
You can substitute other cheeses like provolone or mozzarella if Gruyere or Swiss are not available.
This dish reheats well and can be stored in an airtight container in the refrigerator for up to 3 days.
