A simple and quick fruit pizza using refrigerated sugar cookie dough and a cream cheese frosting, perfect for a fast dessert.

  • 1 (16.5 ounce) package refrigerated sugar cookie dough
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups assorted fresh fruit, sliced or chopped (such as strawberries, blueberries, kiwi, mandarin oranges, raspberries)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Press the sugar cookie dough evenly into the bottom of a 12-inch pizza pan or a 9×13 inch baking dish.
  3. Bake for 12-15 minutes, or until the edges are lightly golden brown. Let the crust cool completely.
  4. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. Spread the cream cheese frosting evenly over the cooled cookie crust.
  6. Arrange the fresh fruit over the frosting to create your desired design.
  7. Chill for at least 30 minutes before slicing and serving.

Notes

  • For mini fruit pizzas, press cookie dough into mini muffin tins and bake for 8-10 minutes.
  • You can use canned fruit, but drain it very well to prevent a soggy crust.
  • Add a glaze made from melted apricot jam for extra shine.
