1.5 lbs sirloin steak, cut into 1-inch cubes
1.5 lbs baby potatoes, halved or quartered
4 tbsp unsalted butter
4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh parsley, chopped
1 tsp salt
0.5 tsp black pepper
2 tbsp olive oil
Instructions
Toss potatoes with 1 tbsp olive oil, salt, and pepper.
Heat 1 tbsp olive oil in a large cast-iron skillet over medium-high heat. Add potatoes and cook for 10-12 minutes, stirring occasionally, until browned and tender. Remove potatoes from skillet and set aside.
Add steak cubes to the same skillet. Sear for 1-2 minutes per side until browned. Remove steak from skillet and set aside with potatoes.
Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook for 1 minute until fragrant.
Stir in chopped rosemary and parsley.
Return the steak bites and potatoes to the skillet. Toss to coat everything in the garlic butter sauce. Cook for another 1-2 minutes until steak is cooked to your desired doneness and potatoes are heated through.
Serve immediately.
Notes
For crispier potatoes, ensure they have enough space in the skillet and do not overcrowd the pan.
You can substitute sirloin steak with other tender cuts like ribeye or filet mignon.
Add a pinch of red pepper flakes for a touch of heat.
Fresh herbs add the best flavor, but dried herbs can be used in a pinch (use about 1/3 the amount of fresh).
