  • 1 (9 inch) pre-made chocolate pie crust or Oreo cookie crust
  • 1 (3.4 ounce) package instant chocolate pudding mix
  • 1 cup cold milk
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans
  • 1/2 cup powdered sugar
  • 1/4 cup butter, softened
  • 1/4 cup evaporated milk

Instructions

  1. Prepare the coconut-pecan topping: In a medium bowl, combine the shredded coconut, chopped pecans, powdered sugar, softened butter, and evaporated milk. Mix until well combined. Set aside.
  2. Prepare the chocolate filling: In a large bowl, whisk the instant chocolate pudding mix and cold milk together for two minutes until the mixture thickens.
  3. Gently fold half of the thawed whipped topping into the thickened chocolate pudding until just combined.
  4. Spread the chocolate mixture evenly into the prepared pie crust.
  5. Spread the remaining half of the whipped topping over the chocolate layer.
  6. Spoon the coconut-pecan mixture evenly over the whipped topping layer.
  7. Chill the pie in the refrigerator for at least four hours, or until firm.
  8. Slice and serve this decadent chocolate dessert cold.

Notes

  • For a homemade Oreo crust, crush 24 chocolate sandwich cookies and mix with 6 tablespoons of melted butter. Press into a 9-inch pie plate and chill for 30 minutes before filling.
  • You can toast the pecans lightly before adding them to the topping for deeper flavor.
