1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 medium yellow onion, chopped
2 carrots, peeled and sliced
2 celery stalks, sliced
2 cloves garlic, minced
6 cups chicken broth
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (16 ounce) package potato gnocchi
1/2 cup all-purpose flour
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
3 cups fresh spinach, roughly chopped
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken pieces and cook until lightly browned on all sides, about 5 minutes. Remove chicken and set aside.
Add onion, carrots, and celery to the pot. Cook until vegetables soften, about 7 minutes. Add minced garlic and cook for 1 minute more until fragrant.
Pour in chicken broth. Stir in Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
Return the browned chicken to the pot. Add the package of gnocchi. Cook according to package directions, usually about 3 to 5 minutes, until the gnocchi float.
In a small bowl, whisk together the flour and 1/2 cup of cold water until smooth to create a slurry. Slowly whisk the slurry into the simmering soup to thicken the broth. Cook for 2 minutes, stirring constantly.
Reduce the heat to low. Stir in the heavy cream and Parmesan cheese until the cheese melts and the soup is creamy. Do not let the soup boil after adding the cream.
Stir in the chopped spinach until it wilts into the soup, about 1 minute.
Serve this easy chicken gnocchi soup hot.
Notes
For a quicker version, use pre-cooked rotisserie chicken, shredded, and add it in step 4 along with the gnocchi.
If you prefer a richer flavor, substitute half of the chicken broth with half-and-half.
You can substitute fresh spinach with frozen spinach, thawed and squeezed dry.
