Make this easy Greek Yogurt Banana Bread for a soft, tender loaf. Greek yogurt keeps the bread moist and adds protein, making it a great healthy breakfast or snack option.

  • 3 large overripe bananas, mashed
  • 1 cup plain Greek yogurt
  • 1/2 cup melted unsalted butter or coconut oil
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until mostly smooth.
  3. Stir the Greek yogurt, melted butter, brown sugar, eggs, and vanilla extract into the mashed bananas until combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix the batter.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • For an even softer loaf, you can substitute half the all-purpose flour with cake flour.
  • If you prefer a less sweet loaf, reduce the brown sugar to 1/2 cup.
  • This recipe works well with 2% or full-fat Greek yogurt for the best texture.
