1 pound lean ground turkey
1 medium yellow onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
1 (15 ounce) can tomato sauce
4 cups chicken broth
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces penne pasta or rotini
1/2 cup heavy cream (optional, for creaminess)
1/2 cup grated Parmesan cheese
2 cups fresh spinach
Instructions
Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat.
Add the ground turkey to the skillet. Break it up with a spoon and cook until browned completely. Drain any excess fat.
Add the chopped onion to the skillet with the turkey and cook until softened, about 4 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the diced tomatoes (with juice), tomato sauce, chicken broth, Italian seasoning, salt, and pepper. Stir well to combine.
Bring the mixture to a boil. Once boiling, add the dry pasta to the skillet. Stir to submerge the pasta in the liquid.
Reduce the heat to medium-low, cover the skillet, and simmer for 12 to 15 minutes, stirring occasionally to prevent the pasta from sticking to the bottom. Cook until the pasta is tender and most of the liquid is absorbed.
Remove the skillet from the heat. Stir in the heavy cream, if using, and the fresh spinach until the spinach wilts.
Stir in the Parmesan cheese until melted and the sauce is creamy.
Serve immediately. This is a great 30 minute turkey pasta meal.
Notes
For a healthier option, skip the heavy cream and use 1/2 cup of milk or half-and-half instead.
