Juicy, saucy chicken skewers with a sweet and tangy honey BBQ glaze, perfect for your next backyard cookout.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1/2 cup honey
  • 1/2 cup ketchup
  • 1/4 cup apple cider vinegar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a medium bowl, whisk together honey, ketchup, apple cider vinegar, Worcestershire sauce, soy sauce, garlic powder, black pepper, and cayenne pepper (if using) to make the honey BBQ glaze.
  3. Reserve about 1/2 cup of the glaze for basting later.
  4. Add the chicken pieces to the remaining glaze in the bowl and toss to coat. Let marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  5. Thread the marinated chicken pieces onto the skewers, alternating with pieces of red bell pepper, green bell pepper, and red onion.
  6. Preheat your grill to medium-high heat.
  7. Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp.
  8. During the last few minutes of grilling, brush the kabobs with the reserved honey BBQ glaze.
  9. Remove from grill and let rest for a few minutes before serving.

Notes

  • For a make-ahead option, you can prepare the kabobs and marinate the chicken the day before.
  • You can substitute chicken breasts for thighs, but be careful not to overcook them.
  • Other vegetables like zucchini, cherry tomatoes, or pineapple chunks can also be used.
  • Serve with your favorite summer sides like potato salad or coleslaw.
