Create a flavorful, creamy, and tangy honey mustard chicken salad perfect for a quick lunch or meal prep. This recipe uses simple ingredients for a satisfying, high-protein dish.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1/2 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 1/2 cup mayonnaise (or Greek yogurt for lower fat)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 tablespoons honey
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 4 slices cooked bacon, crumbled
  • Optional: 1/2 avocado, diced

Instructions

  1. Place the shredded chicken, celery, and red onion in a medium mixing bowl.
  2. In a separate small bowl, whisk together the mayonnaise (or Greek yogurt), Dijon mustard, whole grain mustard, honey, apple cider vinegar, salt, and pepper until the creamy honey mustard dressing is smooth.
  3. Pour the dressing over the chicken mixture.
  4. Gently fold all ingredients together until the chicken is evenly coated.
  5. If using, stir in the crumbled bacon and diced avocado.
  6. Cover the bowl and chill the chicken salad for at least 15 minutes before serving to allow the flavors to combine.
  7. Serve as a chicken salad sandwich filling, over fresh greens, or in lettuce cups.

Notes

  • For a low-carb chicken salad option, skip any added sugar and serve this mixture in crisp lettuce wraps instead of bread.
  • You can substitute turkey bacon or turkey ham for added variety in your chicken salad variations.
  • This recipe is excellent for healthy chicken salad meal prep; it keeps well in the refrigerator for up to four days.
