1 pound smoked kielbasa sausage, sliced
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
4 cups chicken broth
1 cup heavy cream
8 ounces uncooked elbow macaroni or penne pasta
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sliced kielbasa and cook until lightly browned, about 5 minutes. Remove the sausage and set it aside.
Add the chopped onion to the same pot and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Pour in the diced tomatoes (with their juice) and the chicken broth. Bring the mixture to a boil.
Stir in the uncooked pasta, Italian seasoning, salt, and pepper. Reduce the heat to medium-low, cover the pot, and simmer for 10 to 12 minutes, stirring occasionally to prevent sticking, until the pasta is tender.
Stir in the heavy cream. Let the mixture heat through for 1 minute.
Remove the pot from the heat. Stir in the cheddar cheese and mozzarella cheese until the sauce is smooth and creamy.
Return the cooked kielbasa to the pot and stir to combine. Serve immediately.
Notes
You can substitute smoked sausage for kielbasa if needed.
For added vegetables, stir in 1 cup of frozen peas or spinach during the last 2 minutes of simmering.
