1 pound lean ground beef
1 onion, chopped
2 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (16 ounce) package lasagna noodles
1 (24 ounce) container cottage cheese
1 egg, beaten
1/4 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, brown the ground beef with the chopped onion until the beef is no longer pink. Drain off any excess grease.
Stir in the minced garlic, crushed tomatoes, tomato paste, basil, oregano, salt, and pepper. Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally.
While the sauce is simmering, cook the lasagna noodles according to package directions. Drain and rinse with cold water.
In a medium bowl, combine the cottage cheese, beaten egg, and Parmesan cheese. Mix well.
Spread a thin layer of the meat sauce in the bottom of a 9×13 inch baking dish.
Arrange a layer of cooked lasagna noodles over the sauce.
Spread half of the cottage cheese mixture evenly over the noodles.
Spoon about one-third of the remaining meat sauce over the cottage cheese.
Sprinkle with one-third of the mozzarella cheese.
Repeat the layers: noodles, remaining cottage cheese mixture, another third of the meat sauce, and another third of the mozzarella cheese.
Top with the final layer of noodles, the rest of the meat sauce, and the remaining mozzarella cheese.
Cover the baking dish with aluminum foil.
Bake for 25 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the lasagna is heated through.
Let the lasagna rest for 10 minutes before serving.
Notes
For a richer flavor, you can add a pinch of red pepper flakes to the meat sauce.
If you don’t have cottage cheese, you can substitute with ricotta cheese, though the texture and protein content will differ.
This recipe freezes well. Let it cool completely before wrapping tightly and freezing. Reheat in a 350°F (175°C) oven until heated through.
