Ingredients
Scale
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
4 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1/2 cup sun-dried tomatoes, drained and chopped
1/2 cup grated Parmesan cheese
Fresh basil or parsley for garnish (optional)
Instructions
Season the chicken breasts on both sides with salt, pepper, and Italian seasoning.
Heat the olive oil and butter in a large skillet over medium-high heat.
Place the chicken in the hot skillet and sear for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken from the skillet and set aside.
Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let the broth simmer for 1 minute.
Stir in the heavy cream and chopped sun-dried tomatoes. Bring the sauce to a gentle simmer.
Reduce the heat to low and stir in the grated Parmesan cheese until the sauce is smooth and thickened. Taste and adjust seasoning if needed.
Return the cooked chicken breasts to the skillet. Spoon the parmesan cream sauce over the chicken.
Simmer for 2 to 3 minutes to heat the chicken through and allow it to absorb the sauce flavor.
Garnish with fresh basil or parsley before serving. Serve this creamy chicken dinner over rice or pasta.
Notes
For a keto friendly chicken recipes option, serve this dish with zucchini noodles or cauliflower rice instead of traditional pasta or rice.
If you prefer a tangier flavor, use oil-packed sun-dried tomatoes. Drain the oil but reserve one tablespoon to sear the chicken in instead of butter and oil.
You can use chicken thighs instead of breasts, but adjust the cooking time as needed for thicker cuts.
