Make these light, crunchy Mediterranean Spinach and Feta Cheese Crisps. They are savory bites perfect for quick appetizers or healthy snacking.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup fresh spinach, finely chopped
  • 4 ounces feta cheese, crumbled
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon black pepper
  • 1 package (10 sheets) phyllo dough, thawed
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
  2. In a small bowl, combine the chopped spinach, crumbled feta cheese, oregano, and black pepper. Mix until the ingredients are evenly distributed.
  3. Lay one sheet of phyllo dough flat on your work surface. Brush the entire surface lightly with melted butter.
  4. Place a second sheet of phyllo dough directly on top of the first. Brush this second sheet with butter as well.
  5. Place about 1 tablespoon of the spinach and feta mixture near one edge of the layered phyllo sheets.
  6. Fold the sides of the phyllo over the filling, then roll the dough tightly into a small cigar or crisp shape. Brush the outside of the roll lightly with butter.
  7. Place the finished crisp seam-side down on the prepared baking sheet.
  8. Repeat steps 3 through 6 with the remaining phyllo dough and filling mixture to create about 10 crisps.
  9. Bake for 12 to 15 minutes, or until the phyllo is golden brown and crispy.
  10. Remove from the oven and let cool slightly before serving as a party platter addition.

Notes

  • For extra flavor, add a pinch of lemon zest to the spinach and feta filling.
  • If you want a lower-carb spinach snack, you can use low-carb tortillas instead of phyllo dough, though the texture will change.
  • Serve these savory Greek cheese snacks warm with a side of plain Greek yogurt for dipping.
