  • 3 lbs Russet potatoes, peeled
  • 1 tablespoon unsalted butter
  • 2 cloves roasted garlic, mashed
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup Gruyère cheese, shredded
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Preheat your oven to 375°F (190°C). Grease an 8×8 inch baking dish with butter.
  2. Slice the potatoes very thinly, about 1/16 inch thick. You can use a mandoline for consistent thickness.
  3. In a medium saucepan, combine the heavy cream, milk, mashed roasted garlic, salt, pepper, and nutmeg. Heat over medium heat until just simmering. Do not boil.
  4. Remove the cream mixture from the heat. Stir in half of the shredded Gruyère cheese until melted and smooth.
  5. Arrange one-third of the sliced potatoes in an even layer in the prepared baking dish.
  6. Pour one-third of the cream sauce evenly over the potatoes. Sprinkle with one-third of the grated Parmesan cheese.
  7. Repeat the layering process twice more: potatoes, sauce, and Parmesan.
  8. Top the final layer of potatoes with the remaining Gruyère cheese.
  9. Cover the baking dish tightly with aluminum foil.
  10. Bake for 45 minutes covered.
  11. Remove the foil and bake for an additional 20 to 25 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.
  12. Let the potatoes au gratin rest for 10 minutes before slicing and serving.

Notes

  • For the best texture, use starchy potatoes like Russets.
  • If you do not have roasted garlic, use 1/2 teaspoon of garlic powder mixed into the cream.
  • To achieve a restaurant-quality texture, ensure your potato slices are uniform in thickness.
