Ingredients

Scale
  • 1 sleeve (about 4 cups) saltine crackers
  • 1 cup unsalted butter
  • 1 cup packed light brown sugar
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or aluminum foil and arrange the saltine crackers in a single layer covering the entire sheet.
  2. In a medium saucepan, combine the butter and brown sugar. Heat over medium heat, stirring constantly until the butter is melted and the sugar is completely dissolved. Bring the mixture to a boil and let it boil for exactly 1 minute without stirring.
  3. Immediately pour the hot toffee mixture evenly over the saltine crackers, spreading it quickly to cover all the crackers.
  4. Bake the crackers with the toffee layer for 5 minutes. The toffee should be bubbly.
  5. Remove the baking sheet from the oven. Sprinkle the chocolate chips evenly over the hot toffee layer. Let the chocolate sit for 5 minutes to soften.
  6. Spread the melted chocolate across the crackers using an offset spatula until the entire surface is covered.
  7. If you want, sprinkle a pinch of sea salt over the chocolate layer now.
  8. Place the baking sheet in the refrigerator for at least 1 hour, or until the chocolate is completely firm.
  9. Once set, break the toffee into irregular pieces. Store in an airtight container.

Notes

  • For a festive variation, sprinkle crushed candy canes or chopped nuts over the melted chocolate before chilling.
  • If you prefer a slightly saltier finish, use salted butter in the toffee mixture.
  • This recipe is excellent for making ahead of time for holiday cookie exchanges or gifting.
