3 lbs Russet potatoes, peeled and thinly sliced
1.5 cups diced cooked ham (leftover ham works well)
1 medium onion, thinly sliced
1.5 cups heavy cream
1 cup milk (whole or 2%)
1 cup shredded sharp cheddar cheese
1/2 cup shredded Gruyere cheese
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
2 tablespoons butter, melted
Instructions
Lightly grease the inside of your slow cooker insert with butter or cooking spray.
In a medium bowl, whisk together the heavy cream, milk, flour, salt, pepper, and garlic powder until the flour is dissolved and the mixture is smooth. This is your sauce base.
Layer half of the sliced potatoes in the bottom of the slow cooker.
Sprinkle half of the diced ham and half of the sliced onion over the potatoes.
Pour half of the cream sauce mixture evenly over the layers.
Repeat the layering process: remaining potatoes, remaining ham, remaining onion, and the rest of the cream sauce.
Sprinkle the cheddar and Gruyere cheeses evenly over the top layer.
Drizzle the melted butter over the top of the cheese layer.
Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the potatoes are tender when pierced with a fork.
Carefully remove the lid and let the casserole rest for 10 minutes before serving.
Notes
For a thicker sauce, you can let the casserole sit uncovered on HIGH for the last 15 minutes of cooking.
If you prefer a baked version, transfer the layered ingredients to a 9×13 inch baking dish and bake at 375°F (190°C) for 60-75 minutes.
