Lemon Garlic Shrimp Orzo Skillet

A quick and easy one-pan shrimp orzo dish with bright lemon and garlic flavors, perfect for a weeknight Mediterranean-inspired meal.

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 cup orzo pasta, uncooked
  • 2 1/2 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon butter

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  2. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  3. Stir in the uncooked orzo and toast for 1 minute.
  4. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed.
  5. Stir in Parmesan cheese, lemon juice, and butter until the cheese is melted and the sauce is creamy.
  6. Return the cooked shrimp to the skillet and stir to combine.
  7. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes with the garlic.
  • Feel free to add other vegetables like spinach or cherry tomatoes in the last few minutes of cooking the orzo.
