  • 2 tablespoons chopped fresh cilantro
  • 12 small corn or flour tortillas
  • For the Avocado Crema:
  • 1 ripe avocado
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon salt
  • For Serving:
  • 1 cup shredded cabbage or slaw mix
  • Lime wedges

Instructions

  1. In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper until coated.
  2. Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side until pink and cooked through.
  3. Remove the skillet from the heat. Stir in the 1/4 cup of lime juice and chopped cilantro with the shrimp.
  4. Prepare the avocado crema: Combine the avocado, Greek yogurt, 1 tablespoon lime juice, and 1/4 teaspoon salt in a food processor or blender. Blend until completely smooth.
  5. Warm the tortillas according to package directions (usually in a dry skillet or microwave).
  6. Assemble the tacos: Place a portion of shrimp onto each warm tortilla. Top with shredded cabbage and drizzle generously with the avocado crema.
  7. Serve immediately with extra lime wedges.

Notes

  • For crispier shrimp, cook in batches to avoid overcrowding the pan.
