Make these soft, chewy espresso cookies topped with a rich mascarpone cream frosting and dusted with cocoa powder. These Tiramisu Cookies capture the classic Italian dessert flavor in a simple cookie format.

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons instant espresso powder, dissolved in 1 tablespoon hot water
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar (for cookie dough)
  • 8 ounces mascarpone cheese, softened
  • 1/2 cup powdered sugar (for frosting)
  • 1/4 teaspoon almond extract
  • Cocoa powder, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract. Mix in the dissolved espresso mixture until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the 1/2 cup of powdered sugar for the cookie dough.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between them.
  7. Bake for 9 to 11 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  8. Prepare the frosting: In a medium bowl, beat the softened mascarpone cheese until smooth.
  9. Gradually beat in the 1/2 cup of powdered sugar and the almond extract until the frosting is creamy and holds soft peaks.
  10. Once the cookies are completely cool, spread or pipe a layer of mascarpone frosting onto the flat side of one cookie. Top with a second cookie to create a sandwich, or simply top each cookie with a dollop of frosting.
  11. Dust the tops generously with cocoa powder before serving.

Notes

  • For a stronger coffee flavor in the cookie base, increase the instant espresso powder to 1 tablespoon dissolved in the hot water.
  • If you prefer a less sweet frosting, reduce the powdered sugar in the frosting by 1 to 2 tablespoons.
  • Store the finished Tiramisu Cookies in an airtight container in the refrigerator due to the mascarpone frosting.
