Learn how to perfectly sear tuna steaks for a quick, healthy, and flavorful meal. This recipe focuses on achieving a beautiful crust while keeping the inside tender and moist.

  • 2 tuna steaks (about 6 oz each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: lemon wedges for serving

Instructions

  1. Pat the tuna steaks completely dry with paper towels. This is crucial for a good sear.
  2. Season both sides of the tuna steaks generously with salt and pepper.
  3. Heat the olive oil in a heavy-bottomed skillet (cast iron works well) over medium-high heat until it shimmers.
  4. Carefully place the seasoned tuna steaks into the hot skillet.
  5. Sear for 1.5 to 2 minutes per side for rare, or 2 to 3 minutes per side for medium-rare. Adjust time based on your desired doneness and the thickness of the steaks. Avoid overcooking.
  6. Remove the tuna steaks from the skillet immediately.
  7. Let the steaks rest for a minute or two before serving.
  8. Serve with lemon wedges, if desired.

Notes

  • For a different flavor, you can add garlic powder or your favorite seafood seasoning to the tuna before searing.
  • If you prefer your tuna more well-done, you can reduce the heat slightly after searing the first side and cook for a few minutes longer, but be aware it can become dry.
  • This method is excellent for ahi tuna steaks.
