Make this simple, flavorful turmeric rice in one pot. It features garlic and lemon for a bright, aromatic side dish ready quickly.

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 1/2 cups basmati rice, rinsed
  • 2 teaspoons ground turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 1/4 cups vegetable broth
  • 1 tablespoon butter
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Heat the olive oil in a medium saucepan or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 4 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  4. Stir in the rinsed basmati rice, turmeric, salt, and pepper. Cook for 1 minute, stirring constantly to coat the rice grains.
  5. Pour in the vegetable broth. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan tightly, and simmer for 15 minutes without lifting the lid.
  7. Remove the pan from the heat and let it stand, covered, for an additional 10 minutes.
  8. Fluff the rice gently with a fork. Stir in the butter, lemon juice, and lemon zest until combined.
  9. Serve immediately as a side dish.

Notes

  • Rinsing the basmati rice helps remove excess starch, resulting in fluffier grains.
  • For a richer flavor, substitute half of the vegetable broth with coconut milk.
  • This rice pairs well with grilled chicken, fish, or vegetable curries.
