Ingredients
Scale
2 cups apple, chopped
2 cups pear, chopped
1 cup clementine or mandarin orange segments
1 cup pomegranate arils
1/2 cup vanilla Greek yogurt
2 tablespoons maple syrup
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1 tablespoon fresh lime juice
Instructions
Prepare all the fruit: wash, core, peel (if necessary), and chop the apples and pears into bite-sized pieces. Peel and separate the clementines into segments.
In a medium bowl, whisk together the vanilla Greek yogurt, maple syrup, ground cinnamon, vanilla extract, and fresh lime juice until the dressing is smooth. This is your cinnamon vanilla dressing.
In a large serving bowl, combine the chopped apples, pears, clementine segments, and pomegranate arils.
Pour the cinnamon vanilla dressing over the fruit mixture.
Gently toss the fruit until all pieces are lightly coated with the dressing.
Serve the healthy winter fruit salad immediately, or cover and chill for up to one hour before serving for a more refreshing taste.
Notes
For a festive fruit salad presentation, use only red and green fruits like pomegranate, green apple, and orange segments.
If you prefer a thinner dressing, add one teaspoon of milk or water to the mixture.
This recipe works well for Christmas brunch ideas or as a light dessert recipe.
