Quick and crispy zucchini fritters made with minimal ingredients, perfect for a snack or side dish.

  • 2 cups grated zucchini, squeezed dry
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 2 tablespoons chopped fresh chives or green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for frying

Instructions

  1. In a medium bowl, combine the grated zucchini, flour, Parmesan cheese, beaten egg, chives, salt, and pepper. Mix until just combined.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Drop heaping tablespoons of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon.
  4. Cook for 3-4 minutes per side, until golden brown and crispy.
  5. Remove fritters from the skillet and drain on paper towels.
  6. Serve hot.

Notes

  • For extra crispy fritters, ensure you squeeze as much moisture as possible from the grated zucchini.
  • You can bake these fritters at 400°F (200°C) for 15-20 minutes, flipping halfway, for a healthier option.
  • Air fryer instructions: Preheat air fryer to 375°F (190°C). Lightly spray fritters with oil. Cook for 8-10 minutes, flipping halfway, until golden and crispy.
